Peanut Butter Cookies

When you're baking cookies, you might be used to making chocolate chip cookies. It's probably the most commonly baked cookie. But every once in a while, you ought to make a change. Snickerdoodles are a tasty treat, and sugar cookies are fun to bake and decorate. But peanut butter cookies are probably one of the easiest--and tastiest--kinds of cookies there are.

Are Peanut Butter Cookies a Healthy Choice?
Everyone knows that peanut butter has a lot of fat and calories. But the fat in peanut butter is the kind that's actually good for you, not that artery-clogging stuff. And since fat (of any kind) has 9 calories per gram, anything with a lot of fat will have a lot of calories. Assuming you don't overdo it, you can have peanut butter cookies occasionally. (Everything in moderation! Besides, you work out, right?)

At any rate, there is a recipe for peanut butter cookies that makes it healthier because it takes out the white flour and cuts down on the sugar by using Splenda. Check it out:

Healthy Peanut Butter Cookies
1 cup creamy peanut butter
1 1/3 cups Splenda
1 egg
1 teaspoon vanilla extract

1. Preheat oven to 350.
2. Grease a large baking sheet.
3. In a mixing bowl, combine the peanut butter, 1 cup of the Splenda, egg and vanilla.
4. Roll the dough into balls the size of walnuts and place on the prepared baking sheet.
5. With a fork, dipped in the remaining sugar replacement, press a crisscross design on each cookie.
6. Bake for 12 minutes.
7. Remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement.
8. Cool slightly before removing from pan.

With this recipe, even those who are cutting calories or carbs can enjoy peanut butter cookies guilt-free!
